If it seems like I just can’t get enough of the kid-like flavors these days… well, mostly that’s because I can’t. But it’s also because I recently baked for another hackathon. This time, I streamlined my process: only bar cookies, and only things that would be relatively recognizable and would appeal to the junk food-loving palates of engineers. So I went for a brownie, a chocolate chip cookie, a rice crispy treat, and these pb&j bars. The whole process was much less stressful than last time, and now I have a few more great recipes! All in all, a success.

While the other treats tended toward adult interpretations of kid food – coffee in chocolate chip cookies, salt in rice crispy treats, white whole wheat flour in brownies – these were unapologetically kid food. They are no more or less than a bar cookie form of every kid’s – and many adults’ – favorite sandwich.
